120 Calorie Peanut Butter Drizzled Rice Cakes...yes, with sprinkles!

Healthy snacks are hard to come by, especially ones that can provide that sweet and salty taste while not breaking the calorie bank. This healthy snack clocks in just shy of 120 calories per deliciously drizzled rice cake. You can even it make it less calories by not adding the sprinkles. But who wants to do that.

Especially for the upcoming holiday, healthy snacks are hard to find that are quick and lower in calories. Have no fear, this one takes just a couple minutes to put together and you’ve got a great healthy snack to hold you over until the real fun begins. Or, you may even find this satisfies your cravings in place of a sweet treat later!

If you’re a peanut butter lover like me, you may be wondering how in the world can you make a healthy snack with peanut butter and still be less than roughly 200 calories? Well, my friends, take a look at the recipe below and see for yourself.

Peanut Butter Drizzled Rice Cakes

Preparation: 2 minutes

Yields: 1 rice cake

Ingredients

  • 1 Quaker Corn Gluten Free Rice Cake (I used Caramel flavored)
  • 2 Tbsp PB2 Peanut Butter Powder
  • 1.5 Tbsp water

Optional Ingredients: Sprinkles, fruit, or really any other topping!

Instructions:

  1. Grab a rice cake.
  2. Mix the water with the powder.
  3. Drizzle peanut butter mixture over the rice cake.
  4. Optional: Add sprinkles and/or fruit.

Notes: The 120 calorie estimate is based off of 2 full strawberries, approximately 8 blueberries, and a few sprinkles along with the rice cake.
