Everyone has their favorite pizza and from their favorite place. While no one is trying to keep you from indulging in your guilty pleasure food, here’s a simple and quick take that can be served for an array of events. Need a summer appetizer? It’s perfect. Looking for a quick lunch? Done. Craving something light yet filling? This is it. Not to mention this is a perfect snack for kids and a unique way to get them to try some foods they may not normally eat otherwise.

The best part about recipes that are customizable is that you can change the flavor easily and not get sick of eating it. This health-inspired recipe is based on Mediterranean toppings however, you can add whatever you want after your base of pita and hummus. If you love bell peppers, banana peppers, or beets… add them! Want bleu cheese instead of feta? Why not! The list is endless.

You’ll find that this recipe is made best when you have a good basis of carbs, fats, and protein though. My favorite addition that isn’t pictured is grilled chicken! Usually, I’ll add that if I want it to be the only thing I’m eating for the meal. Otherwise, I use it as a great mid-day snack, or pair it with a protein of choice.

Greek Pita Pizza

A fun, healthy, and protein packed snack.
Prep Time 15 minutes
Servings 6 slices

Ingredients
  

  • 1 slice Greek Pita Bread White or Whole Wheat (large)
  • 1/3 cup Hummus Approximately 6 Tbsp.
  • 1/3 cup Diced Cucumbers
  • 1/4 cup Diced Kalamata Olives
  • 1/3 cup Crumbled Feta Full or Reduced Fat
  • 1/4 cup Diced Peppers Optional
  • 1/4 cup Sliced Grape Tomatoes Optional
  • 2 Tbsp Tzatziki Optional

Instructions
 

  • 1. Spread hummus on pita bread.
  • 2. Sprinkle toppings (cucumbers, olives, feta, peppers, tomatoes, etc.) on top of the hummus.
  • 3. (Optional) Drizzle tzatziki on top.
  • 4. Slice greek pita pizza into 4 slices.
  • 5. Serve immediately.
