Hearty Chicken Noodle Soup

IT’S GIVING COMFORT IN A BOWL WITH THIS CHICKEN NOODLE SOUP RECIPE

No matter what time of year, nothing brings more comfort than a good hearty and healthy recipe. One that reminds you of your childhood. One that can really be relied on in sickness and in health. Having a good homemade chicken noodle soup is a must-have recipe for any kitchen. It’s simple and super good for the soul.

Whether you’re under the weather or trying to warm up during the coldest time of the year, a staple chicken noodle soup recipe can really be a game changer. So if you don’t have a good recipe, you need to try this one!

Let’s take a look at some of the ingredients that make this one so yummy!

Chicken

This one may seem obvious but how the chicken is prepared really can make a difference. It can be prepared many ways however, my favorite is by baking it (to retain the juices). I also prefer to use chicken tenderloins because I can easily shred afterwards however, feel free to prepare it however you like.

Noodles

You can use any noodle you like but I prefer to use egg noodles or macaroni. In this particular recipe I used egg noodles (whole wheat regular size and then extra wide variety mixed together). Smaller noodles work best (i.e. I’d avoid using penne) but whatever works!

Vegetables

What makes this recipe hearty is the variety of vegetables used. By allowing them to cook in the broth for a while, they are so easy to eat and super soft. I am for large carrots and then wash and peel before chopping up. Of course you need celery and then I grab a large onion. I used a yellow onion however, you can use any onion I suppose.

Seasonings

You’ll see the standard garlic powder, salt, and black pepper however, I did add a little paprika (less spicy than cayenne pepper but feel free to use that instead) and some cumin. Get creative! I’ve even added Kinders Buttery Garlic Salt seasoning before and it added just the right taste! Lastly, the fresh dill is what really sets this recipe apart. It smells amazing and adds so much flavor.

Broth

You can use any broth but why not use bone broth? Not only is it known to help your digestion and immune system, according to GoodFood.com it can also help boost collagen.

Hearty Chicken Noodle Soup

Chicken Noodle Soup

Ingredients
  

Soup Ingredients

  • 32 oz Chicken Bone Broth or stock
  • 4 cups Water
  • 2 cups Noodles egg noodles or elbow is preferred
  • 1/4 cup Dill Fresh, chopped (may use up to 1/2 cup if desired)
  • 2 Tbsp Avocado Oil or Olive Oil
  • 3 Large Carrots Peeled; dice or slice
  • 3 Celery Stalks Dice
  • 1 Large Onion Dice (I prefer finely)
  • 1 Lemon juice only (may use more lemon juice for individual servings)
  • 8 tsp Garlic Minced (fresh is preferred)
  • Salt to taste generous pinch

Chicken Ingredients

  • 1 lb Chicken Tenderloins (Chicken Breast Tenders) boneless, skinless; may use more chicken if desired (can also use rotisserie)
  • 2 Tbsp Avocado Oil or Olive Oil';[gc[ ''
  • 2 tsp Garlic Powder add more or less as desired
  • 1 tsp Cumin
  • 1/2 tsp Paprika may use cayenne powder if you want spicier
  • 1/2 tsp Oregano dried
  • 1 tsp Salt Himalayan Salt (my preferred salt)
  • 3/4 tsp Ground Black Pepper or to taste

Instructions
 

  • Preheat oven to 350˚F.
  • Place chicken on a baking dish or sheet pan.
  • Drizzle with the oil and seasonings (both sides.)
  • Place in oven and cook for approximately 20 minutes or until done. (Flip halfway if desired.)
  • Slice, pull or dice chicken for desired size for soup.
  • If you want to cook your noodles separate, start boiling the water now. Add your noodles once it starts to boil. (This method is suggested if you are not planning to eat all the soup in one sitting.)
  • While the chicken is cooking, start the soup.
  • Using a large soup pot (or you can use a heavy bottom soup dish or dutch oven), begin by heating up the avocado/olive oil.
  • Add the veggies (carrots, onions, and celery) stirring occasionally. (Approximately 7 minutes)
  • Add garlic and salt and continue to cook for another 2-3 minutes.
  • Add the chicken bone broth and water.
  • Increase the heat to high and bring soup to a boil.
  • Then, reduce heat to medium-low to continue cooking the vegetables until they are soft. If you did NOT cook your noodles separately, add them now to cook and simmer for approximately 10 minutes.
  • Stir in the chicken (and noodles if you cook separately.)
  • Add the lemon juice and dill as desired for taste and garnish.
