Make your meal prep quick yet tasty with this honey garlic soy ground beef and veggies recipe. It’s got a sweet and savory taste that can be eaten cold or hot. It is best paired with rice and can be stored for a quick lunch or dinner throughout the week.

Main Ingredients

  1. Ground Beef (although I prefer Bison)
  2. Onions
  3. Zucchini
  4. Carrots
  5. Special Sauce

Just like most recipes I post about, this one can be customized to your liking. I use about 1 cup per vegetable but since I had so many carrots this time, I probably ended up around 2 cups. This is also a great recipe to add other ingredients as you seen fit.

Although this recipe says beef, I like to use bison as stated above. However, don’t stop there. You can use ground chicken or turkey as well. Again, this Honey Garlic Soy Ground Beef and Veggies recipe is so versatile. What makes it taste so good is definitely the sauce. So, let’s get into it.

When I originally looked for a recipe for sauce, I found one but it made WAY too much for this recipe. So below you’ll find the ingredients I used but feel free to make more if you feel you want more. With the honey and soy mixed, it does provide plently of flavor so I think you’ll find that a little goes a long way!

Honey Garlic Ground Beef Veggies Meal Prep

Honey Garlic Soy with Ground Beef & Veggies

Ingredients
  

  • 1 lb Ground Beef (I like to use Bison)
  • 1 cup diced onions Amount can vary
  • 1 cup shredded carrots Freshly shredded; amount can vary
  • 1 cup shredded zucchini Amount can vary

Sauce

  • 1/2 cup Honey
  • 1 Tbsp. Garlic minced, dried, etc.
  • 1-2 Tbsp. Reduced Sodium Soy Sauce
  • 2 tsp Sesame seeds Can use a sesame seed blend too
  • 1 tsp Avocado Oil you can use other oils

Instructions
 

  • Heat up pan and drizzle a little oil while adding the diced onions.
  • Add ground beef, bison or turkey (salt as desired).
  • Shredded carrots and zucchini and add to pan (or have a separate pan to cook them in.)
  • Once the bison is almost cooked, add the carrots and zucchini to finish cooking together.
  • Add the sauce mixture and stir until done.
  • Store in meal prep containers or serve fresh. I like to pair it with white rice!

Sauce Instructions

  • Add all ingredients to a small bowl or cup and stir until combined.
  • Add mixture in the pan toward the end of cooking.
