Get your oven ready for this Taco Stuffed Sweet Potato Recipe
Most everyone loves tacos, even if we can’t all agree on what the toppings are. Well, welcome to a variation of this beloved traditional meal. One where you can still have the toppings your heart desires while opting for the sweet and filling taste of a shell-like sweet potato (or vessel is more like it.) This Taco Stuff Sweet Potato recipe is simple (minus the prepping part) and can be a healthier version in place of your corn shells or soft tortillas. Let me say this: there is absolutely nothing wrong with tortillas and corn shells, but if you’re looking to forego the flour or corn and want something new…this. Is. it.
Additionally, sweet potatoes are full of great nutrients that differ from the nutrients found in other potatoes. There is one caveat. In order to make this recipe “easier”, you’ll definitely want to plan out your day and when to start the oven due to the sweet potato bake time. No need to worry though, the recipe below will give you all the details so that you can get the oven going and prepare the other food in the meantime. It might take a little more prepping (with the potatoes) than you’re used to but it’s well worth it.

Taco Stuffed Sweet Potato
Ingredients
- 1 lb. Ground Beef or meat of your choice
- 4 Medium Size Sweet Potatoes
- 2-4 tbsp. of cheese or as much as desired
- 2-4 tbsp. of diced tomatoes and green chiles can use any diced/minced tomatoes or salsa
- 1 tbsp. Onion Powder
- 1 tbsp. Minced Chives or cilantro
- 1 tsp. Salt to taste
- 2 tbsp Optional: Taco Seasoning
- 2 tbsp Optional: Sour Cream guacamole (not pictured)
Instructions
- Preheat over to 400˚ for sweet potatoes.
- With a fork, poke small holes in the sweet potatoes and wrap in foil or place in something secure (for juices and increased steaming)
- Place sweet potatoes in the oven and remove one they are tender, approximately 45-55 min.
- Meanwhile, cook the ground (or your meat of choice) along with the onion powder and any other additions (diced peppers, onions, black beans, etc)
- Once sweet potatoes are done, slice down the middle to create space for the meat.
- Add meat and top with shredded cheese, diced tomatoes and green chilies, and other optional toppings (sour cream, guacamole, etc.)
- Finish off with a pinch of minced chives or cilantro (mostly for presentation)

Can I use other potatoes?
Yes, you can definitely use other types of potatoes however, this will drastically change the flavor. The reason the sweet potato works is because it doesn’t have that starchy taste and is sweeter than other varieties.
Can I use other types of meat?
Yes, you can use any type of meat you want. Again, the flavor might change ever so slightly. I prefer ground bison however, the most popular is beef. Bison is a lean source of meat and due to the animal usually being grass fed, there is possibly less to worry about when it comes to the integrity of the meat. I have used ground turkey, ground beef, and ground buffalo which provided a similar taste. Feel free to try different ones, including pulled pork!
What if I don’t have all the ingredients listed?
This is one of those recipes where you can use whatever season, toppings, vegetables, you’d like. That’s why this simple recipe is only made complicated by how long the sweet potatoes take to cook. That’s it! Get creative and give it a unique flavor to your liking.
