Taco Stuffed Sweet Potato

A spin on one of your favorite mexican meals

Servings 4 people

Ingredients
  

  • 1 lb. Ground Beef or meat of your choice
  • 4 Medium Size Sweet Potatoes
  • 2-4 tbsp. of cheese or as much as desired
  • 2-4 tbsp. of diced tomatoes and green chiles can use any diced/minced tomatoes or salsa
  • 1 tbsp. Onion Powder
  • 1 tbsp. Minced Chives or cilantro
  • 1 tsp. Salt to taste
  • 2 tbsp Optional: Taco Seasoning
  • 2 tbsp Optional: Sour Cream guacamole (not pictured)

Instructions
 

  • Preheat over to 400˚ for sweet potatoes.
  • With a fork, poke small holes in the sweet potatoes and wrap in foil or place in something secure (for juices and increased steaming)
  • Place sweet potatoes in the oven and remove one they are tender, approximately 45-55 min.
  • Meanwhile, cook the ground (or your meat of choice) along with the onion powder and any other additions (diced peppers, onions, black beans, etc)
  • Once sweet potatoes are done, slice down the middle to create space for the meat.
  • Add meat and top with shredded cheese, diced tomatoes and green chilies, and other optional toppings (sour cream, guacamole, etc.)
  • Finish off with a pinch of minced chives or cilantro (mostly for presentation)
