Preheat over to 400˚ for sweet potatoes.
With a fork, poke small holes in the sweet potatoes and wrap in foil or place in something secure (for juices and increased steaming)
Place sweet potatoes in the oven and remove one they are tender, approximately 45-55 min.
Meanwhile, cook the ground (or your meat of choice) along with the onion powder and any other additions (diced peppers, onions, black beans, etc)
Once sweet potatoes are done, slice down the middle to create space for the meat.
Add meat and top with shredded cheese, diced tomatoes and green chilies, and other optional toppings (sour cream, guacamole, etc.)
Finish off with a pinch of minced chives or cilantro (mostly for presentation)
